Please keep in mind that you are free to use any processor of your choice and if that is your decision we will simply sell the steer to you based on the live weight at $2.00 per pound. Depending on the location of the processor we will be glad to deliver your steer to them for an additional delivery fee. Otherwise we have made arrangements with Chubby's Packing Company located in Moss Hill, Texas to process our steers. Chubby's vacuum seals all of their cuts with the exception of hamburger. Hamburger is packed in sleeves but for an additional charge they will vacuum seal it or will package the hamburger in 1/4 or 1/2 pound patties. The chart above gives you some idea of the cuts you can expect but keep in mind that many cuts have several names. For example, T-Bone steaks and Porterhouse steaks are the nearly the same. The Porterhouse is just a larger version of the T-Bone because it's carved from the larger portion of the tenderloin. For this reason you should contact Kim (She is real knowledgeable and nice by the way!) at Chubby's to go over your Processing Cut Sheet prior to the steer's delivery. You have to let her know that you are purchasing your beef from our farm when you talk to her.
